Are you a fan of winter greens? After winter’s first frost, healthy greens including collards, kale and broccoli rabe develop a sweeter, less bitter taste. Select greens that have a bright, deep glossy green, and avoid greens that look dull, limp or yellowish. These types of greens often need a thorough washing to remove dirt from the ground. Lower the trimmed greens into a bowl of cold water, gently swish them in the water, and rinse them thoroughly.

Learn how to use color as a guide to cooking. Not only is eating colorful meals healthier for you, but it is more appealing to the eye. Accentuate your dishes with cherry tomatoes, carrot slices, or parsley for a pop of color. Use color in a creative way, and remember that different colors are associated with different types of nutrients in foods.

Any experimentation with spices should include saffron. Saffron will add an incomparable, upbeat flavor to your dish. Though it is old, saffron is loved even in the present day. This highly sought spice, which is actually the stigma of a specific species of crocus, can be quite pricey.

If you’re cooking mac and cheese, always follow the instructions on the box exactly as they’re written. This way, your macaroni will turn out perfectly every time and will taste great with the cheese melted over the top. Use a solid spoon to serve it. Add some pepper or other seasonings to the macaroni to liven it up.

You should try and dry your tomatoes on your own. To be able to dry them yourself, cut the tomatoes half an inch thick, or you should cut Romas lengthwise in half. Put the tomatoes, cut-side up, onto a cooling rack and give them a light salting. Set your oven to 190 degrees, place the rack on a baking sheet and let the tomatoes dry in the oven for approximately 10 hours. Put the tomatoes in plastic bags, and store them in the freezer. Zing up your dried tomatoes and conserve them at the same time by canning them in olive oil and herbs. The jar can be stored in your refrigerator for up to two weeks.

Prepare for your outdoor cooking by starting your barbeque grill so that it’s at optimum temperature when you are ready to cook. It takes approximately 30 minutes for the grill to heat to the proper temperature for cooking. The coals should be at medium heat and they should be ash covered. Grilling at this temperature is highly recommended.

Apples are used a great deal to cook in the winter and fall months, however it is important to store them properly to prevent spoiling. Warm, dry air can cause apples to rot, so keep your excess stock for cooking and eating in plastic bags, and place them where they will stay cool and moist, such as the basement or refrigerator. Remember the rule, one bad apple will spoil the bunch.

If you have bought fruit that is not ripe, put it in a plastic bag with holes. As fruits ripen, ethylene gas is released. The holes in the bag allow the gas to escape, which will make the fruit last longer and taste better.
