Yummy Almond Pancakes

The all-time best – and simplest – recipe for great Almond Pancakes:


- 3/4 Cup Soy Milk or regular milk

- 2 Tbsp Vinegar (white vinegar works best – definitely not balsamic!)

- 1 Egg

- 2 Tbsp Butter or Margarine

- 1 Cup Almond Flour

- 1 Tsp Baking Soda

- 1 half Tbsp Baking Powder

- 1 Small Pinch Salt

- 1 Pinch or two of Sugar

How to Prepare

- Mix vinegar+milk in a small bowl. Let it curdle for a few minutes. This – along with the baking powder – is a secret to fluffy pancakes

- Mix Flour, Baking Powder, Baking Soda, Sugar & Salt in a bowl

- Melt the Butter (in a small bowl in the microwave)

- Dump the Butter/margerine/lard & Egg into the Vinegar+Milk mixture. Whisk until mixed

- Pour the liquid mixture into the large bowl with the dry mixture

Cooking it up!

- Heat the frying pan on medium heat

- Melt 2 Tbsp butter until just sizzling

- Pour the Almond Pancake mix into the pan. Pour one large pancake or several smaller ones.

- Let sit for 5-12 minutes. Almond Flour doesn’t bind as well as wheat flour, so Almond Pancakes take longer to firm up than wheat pancakes.

- When the pancakes are firm enough to flip over, gently do it with a spatula.

- Cook for a little while longer until the pancake easily lifts off the pan and onto your plate

My Favorite Toppings

- Almond Butter – great and tasty – and who couldn’t use more almonds!!

- Honey – drizzle it on!

- Maple Syrup – the old trusty standby

- Fruit – Thawed frozen berries are best! They crumble in their juices and soak the pancakes – delish!

- Chocolate sauce or melted chocolate chunks. I know milk chocolate is tastiest due to the high sugar content, but develop a taste for the dark stuff – its healthier for you
