The Old fashioned Dutch Recipe for Apple Pie

For the Single Pie crust:

2 eggs,

4 cups self-rising flour (500 g),

1 1/3 cup cubed ice cold butter (300 g),

1 cup brown sugar (175 g),

A pinch of salt,

Zest of 1/2 lemon,


four lbs tart apples (1.85 kg),

Juice of 1/2 lemon,

1/3 cup brown sugar (75 g),

2 tsp ground cinnamon,

1 tsp pumpkin pie spices,

1 tbsp corn starch (corn flour),

Streusel Topping:

1/8 cup brown sugar,

cup + 1 Tablespoons flour,

lemon zest,

1 teaspoon nutmeg,

1 teaspoon cinnamon,

1/2 teaspoon salt,

1/2 cup butter,

1/2 cup chopped walnuts,

You might also need a huge spring type cake pan (24 cm x 6.5 cm/10″ x 2 1/2″)

The Preparation:

Pre-heat the oven to 347 degrees F (175 degrees C).

With a big bowl, pour the flour. Using a different container, beat the eggs. Decant much of the beaten eggs into the bowl of flour, reserving approximately a tablespoon of egg aside for later.

Whisk together cubed butter, one cup of brown sugar, salt along with lemon zest. Work on the dough dough by hand or by using a stand mixer with a dough attachment. Press thoroughly and mold the dough perfectly into a ball. Reserve for 20 minutes.

While waiting, prepare the pie filling: scrub, peel off and core the apples. Cut them up into smaller bite-sized chunks and then transfer in a large bowl. Pour in lemon juice, the rest of the 1/3 cup brown sugar, as well as spices. Sprinkle with all the corn starch (corn flour) above and blend thoroughly.

Prepare the streusel topping. With a medium bowl, stir together 1/8 cup brown sugar, cup + 1 tbsp. flour, nutmeg, cinnamon and salt. With a pastry blender, blend in butter in order to disintegrate. Stir in chopped walnuts

Grease the pie tin and then dispersed the dough consistently all over the foot and sides of the dish. Pour out apple mixture equally into the pie plate and then gently press down. Retract the hanging dough back towards the pie to avoid sticking into the pie dish. Spread the streusel topping consistently over the filling.

Sweep the pie corners with the set-aside tablespoon of egg wash and put in prepared oven in order to cook for approximately an hour. Pull off from the oven.

Let it cool inside the cake pan and gently flip out.

Serve Dutch Apple Pie with whipped cream, or vanilla or cinnamon ice-cream.
