Many Are doing some serious baking with the season’s first Great American Bake Sale looming! The menu will include a lot of the favorites you love plus things you’ll never see on The menu! In addition, there will be a spotlight on some wonderful new recipes that contain the ingredients that the very generous Solo Foods has donated. So come to the Great American Bake Sale of Cookie Central, which will be Sunday, May 20, 10am to 4pm on North Andover Common and remember to do a Foursquare check in.

We haven’t written in so long! Here is a quick update: We were the Hunger Message Chair for the best culinary benefit ever! Taste of the Nation Boston was on April 19th at the Hynes Convention Center, and it was fabulous! Tommy Grella was a great emcee with the Honorary Chef Chairs Jody Adams and Gordon Hamersley. Watch for the TOTN Boston YouTube channel where we will post footage of the event and interviews with the best chefs of Boston!

BJ’s Wholesale Club’s Salem Taste of the Town. We owe all the success of hosting a number of Bake Sales and promotions campaign to BJ’s, as they have been a great support and sponsor of this event,”The Great American Bake Sale Campaign”. This year we tried to make it a little different by arranging the table with all the delicacies of bakes and Share Our Strength swag and placed a small coin box with the label “Coins for Kids”. Amazingly, the coins rained into the box and we raised $60 which was beyond expectations. We also had an opportunity to meet some great people like a lady from ‘Head Start’ who was to take part in a “Cooking Matters” class and another lady who had already organized a bake sale event with her students in her school.

The next fun event that is coming up is the Community Bake Walk, which is planned for June 15th to June 17th. If you want to take part in the Community Bake Walk, then all you have to do is supply a small table or counter space for the merchandise. We supply you with the scrumptious chocolate chip cookies and donation jars. The business that raises the most money during the Community Bake Walk will be awarded for their efforts with a Dessert Party!

And now as the Great American Golf Tournament is back, we are in search of a handful of individuals who can help with ideas of planning the event. If you feel you are the most creative one to get an opportunity to share your ideas with us, call us to be a part of “Team Cookie Central“.

The Old fashioned Dutch Recipe for Apple Pie

July 23, 2012 · Posted in Family · Comment

Available in: 1 hour, Serves: 12

Ingredients:

For the Single Pie crust:

2 eggs,

4 cups self-rising flour (500 g),

1 1/3 cup cubed ice cold butter (300 g),

1 cup brown sugar (175 g),

A pinch of salt,

Zest of 1/2 lemon,

Filling:

four lbs tart apples (1.85 kg),

Juice of 1/2 lemon,

1/3 cup brown sugar (75 g),

2 tsp ground cinnamon,

1 tsp pumpkin pie spices,

1 tbsp corn starch (corn flour),

Streusel Topping:

1/8 cup brown sugar,

cup + 1 Tablespoons flour,

lemon zest,

1 teaspoon nutmeg,

1 teaspoon cinnamon,

1/2 teaspoon salt,

1/2 cup butter,

1/2 cup chopped walnuts,

You might also need a huge spring type cake pan (24 cm x 6.5 cm/10″ x 2 1/2″)

The Preparation:

Pre-heat the oven to 347 degrees F (175 degrees C).

With a big bowl, pour the flour. Using a different container, beat the eggs. Decant much of the beaten eggs into the bowl of flour, reserving approximately a tablespoon of egg aside for later.

Whisk together cubed butter, one cup of brown sugar, salt along with lemon zest. Work on the dough dough by hand or by using a stand mixer with a dough attachment. Press thoroughly and mold the dough perfectly into a ball. Reserve for 20 minutes.

While waiting, prepare the pie filling: scrub, peel off and core the apples. Cut them up into smaller bite-sized chunks and then transfer in a large bowl. Pour in lemon juice, the rest of the 1/3 cup brown sugar, as well as spices. Sprinkle with all the corn starch (corn flour) above and blend thoroughly.

Prepare the streusel topping. With a medium bowl, stir together 1/8 cup brown sugar, cup + 1 tbsp. flour, nutmeg, cinnamon and salt. With a pastry blender, blend in butter in order to disintegrate. Stir in chopped walnuts

Grease the pie tin and then dispersed the dough consistently all over the foot and sides of the dish. Pour out apple mixture equally into the pie plate and then gently press down. Retract the hanging dough back towards the pie to avoid sticking into the pie dish. Spread the streusel topping consistently over the filling.

Sweep the pie corners with the set-aside tablespoon of egg wash and put in prepared oven in order to cook for approximately an hour. Pull off from the oven.

Let it cool inside the cake pan and gently flip out.

Serve Dutch Apple Pie with whipped cream, or vanilla or cinnamon ice-cream.

Recipe for Ultimate Chocolate Chip Cookies

June 28, 2012 · Posted in Food and Drinks · Comment

This chocolate chip cookies recipe is the culmination of much experimentation for the complete best in chocolate chip goodness. The trick would be to cream the butter and sugar together, but to not overbeat the dough. One more element that helps to make such a appetizing cookie would be to chill the dough prior to baking. Look at the added suggestions at the end of the recipe for additional insider directions.

Ingredients

1 1/2 cup all-purpose flour, 1/2 tsp. baking soda, 1/2 tsp. salt, 1/4 pound cold unsalted butter, cut into inch pieces, 1/2 cup granulated sugar, 3/4 cup tightly packed light brown sugar, 1 1/2 tsp. real vanilla extract, 1 big egg, room temperature, lightly beaten, 7 ounces bittersweet chocolate

Instructions

1. Sift together the flour, baking soda, and salt in a medium-sized bowl.

2. Inside a separate bowl, cream together the white sugar, light brown sugar, and butter until entirely incorporated.

3. Add the vanilla extract and egg and mix together. Don’t overbeat.

4. Stir in the dry ingredients from the medium sized bowl. It’s important that you don’t overbeat at this point, either.

5. Cover and refrigerate the dough for at least an hour – overnight is preferable.

6. Preheat the oven to 350 degrees. Making use of either parchment paper or slip pads, drop the dough by rounded teaspoons (or making use of a small ice cream scoop) about 2 inches apart.

7. Bake for 10-13 minutes (depending on your oven) or till the edges of the cookies are golden brown. The centers should look “undone”.

8. Take out cookies from the oven and let them set for about five minutes. Move to cooling racks and let cool an additional 15 minutes.

The end result is actually a crispy, but chewy cookie very good enough for by far the most discerning chocolate chip cookie connoisseur (for a lot more recipes check the link). As soon as you attempt this basic but outstanding chocolate chip cookies recipe, you will forget there was ever a different way of baking. Here are some extra tips that could help you in your pursuit of the ideal cookie ever:

1. The cookie dough may be rolled into a log, wrapped in plastic wrap, and refrigerated. Just cut the suitable thickness from the log and bake as instructed above.

2. Use a combination of chocolate, from milk chocolate mini-bits to big chunks of decadent bittersweet goodness.

3. Do not use “fake” vanilla extract. Get the real stuff.

4. By the same token, don’t use “fake” butter, either. Nonetheless, “nut” butters, which include almond or cashew, may be substituted for vegan chocolate chip cookie aficionados.

5. This recipe may also use oatmeal, nuts, or raisins, based on tastes. Reduce the amount of sugar or use a baking sugar substitute to accommodate a diabetic cookie fan.

6. For an outstanding dessert, increase the size of the cookies and use two of them to sandwich your favorite flavor of ice cream.

Some Of My Favorite Types Of Cookies

March 4, 2012 · Posted in Food and Drinks · Comment

Whether they are store bought or homemade, everybody loves at least one type of cookie. These sweet treats are fun to customize, easy to make, and come in endless flavor combinations. It is also a great family tradition for children and adults to get together to bake them around the holidays. Since the combinations of potential ingredients are endless, do not get overwhelmed; here are my favorite types of cookies.

It is probably safe to say that chocolate chip are the standard and most popular kind, not to mention they are very easy to make. You simply do not have a cookie tray if it is missing chocolate chip. They can be made from a pre-made batter or from scratch by using butter, sugar, flour, brown sugar, eggs, salt, vanilla, and chocolate chips. You can even invert the flavors, using chocolate batter and white chocolate chips.

However, you simply do not have a completed assortment without incorporating oatmeal raisin. Using the standard base ingredients for making cookies and adding in some cinnamon, raisins, and rolled oats will give you chewy and delicious treats as the outcome. Bakers can choose to add in some nutmeg or other spices, or simply leave the recipe as is. In any sense, they are probably the best thing to enjoy with milk when it is cold outside.

Anyone who does not have enough time, or perhaps skill, to make desserts from scratch will think that the cake batter cookies are a godsend. They are so easy and quick to make and require very few ingredients. Use any flavor of cake batter, eggs, oil and water and bake them for about nine minutes to produce soft, yummy treats. Use any flavor of cake mix and have fun putting in chips if you please!

Peanut butter lovers are in for a treat when bakers decide to add peanut butter in with the recipe. Simply take all the base ingredients and add in a half of a cup of peanut butter. Blend together and put them on a sheet to bake. When they come out, the traditional decoration for this type of cookie is to make crisscrossing fork prints on top of the biscuit. You can even get wild and add a piece of chocolate on top.

Because they come in so many varieties, it is difficult to choose my favorite types of cookies. There are so many to love, and they are all good for different reasons. However, depending on the time of year, your skill level, and the occasion, some might be more appropriate than others. In any sense, take a recipe and try to have fun with it by taking your own twist on decorations and add-ins.

How to design that special and cool birthday cake for that special person

December 16, 2011 · Posted in Food and Drinks · Comment

In the past, birthday cakes for children were baked by their mothers who usually did not work outside the home. In today’s world, home made cakes are becoming a thing of the past and parents opt for a cake purchased from a grocery store or a speciality bake shop.

It is also possible to order a personalized cake with special designs. These are prepared by experts. Cool birthday cakes are personalized and they are gaining popularity.

The special cake is often planned well before the child’s birthday or party. Popular animated characters, especially those from Disney movies, are often desired.

It could be a depiction of a popular animated character, such as a Walt Disney character, or something simpler representing what the child likes such as a garden, a doll, a ball, a fairy tale title. Ultimately the list is endless.

Be it a boy or a girl they all have their unique interests. Observation is the name of the game. In this busy world it is not always possible to watch a child to find out what would truly excite the child on that special day.

One could initiate a dialogue over a period of time therefore just to get the idea. A surprise cake would be better than spilling the beans well before the event.

Not all ideas can be put to practice but with a bit of imagination and patience nothing is impossible. Most of the ideas could be grouped under “theme cakes”. It is obviously quite interesting to try baking them yourself, but managing to make them would not be a child’s play.

As a result it is best to look for a professional cake designer who is capable of designing and baking such a cake.

Online research can be done in order to find a professional cake baker/decorator to take care of creating your child’s cake. Photos of cake creations should be present on the website, along with other information such as location, delivery fees if applicable, and overall costs.

The work does not end with selecting such professionals. The ingredients of the cake, flavors, and colors are also important. These need to be discussed with the designer.
