First of all, you want to watch the open rate of all of your email campaigns, as this is the main criterion that tells you how people are responding to your subject line. When you do email marketing, you also have to be aware of other analytics like your click through rate -this can be indirectly related to your subject line in that the subject should be relevant to your offer.
